A quick and easy butternut squash soup that delivers deep, nutty flavor in just 20 minutes. Brown butter does the heavy lifting, making this soup taste like it simmered for hours.

Ingredients

  • 1 medium butternut squash (about 2 lbs or 900g), peeled and cubed
  • 4 tablespoons unsalted butter (56g)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable or chicken broth (720ml), low-sodium preferred
  • ½ cup heavy cream (120ml)
  • 1 tablespoon maple syrup
  • Salt and black pepper to taste
  • Optional garnishes: extra cream, toasted pumpkin seeds, red pepper flakes, fried sage leaves

Instructions

  1. Prep the Squash (5 minutes): Peel the butternut squash, cut off the stem and bottom, slice in half lengthwise, scoop out seeds, and cut into 1-inch cubes.
  2. Brown the Butter (3-4 minutes): In a large pot over medium heat, melt the butter. Swirl occasionally until it foams, then the foam subsides and brown specks appear. Immediately add the diced onion and stir.
  3. Sauté the Aromatics (3 minutes): Cook the onion in the brown butter for about 3 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Cook the Squash (8 minutes): Add the cubed squash, a pinch of salt and pepper, and stir. Cook for 2-3 minutes, stirring occasionally.
  5. Add the Broth and Simmer (10 minutes): Pour in the broth and maple syrup, scraping up browned bits. Bring to a boil, then reduce to a simmer. Cover and cook for 10 minutes until squash is tender.
  6. Blend Until Smooth (2 minutes): Remove from heat. Use an immersion blender to blend until smooth, or let cool slightly and blend in batches in a regular blender.
  7. Finish with Cream (1 minute): Stir in the heavy cream. Adjust seasoning with salt and pepper. Add more broth or water if too thick.

Notes

Don’t rush the brown butter; it can burn quickly. Cut squash evenly for consistent cooking. Use low-sodium broth to control salt. Blend hot soup carefully. Soup tastes even better the next day.
