  • 2 packs instant ramen noodles (discard seasoning packets)
  • 3 tablespoons unsalted butter (42g)
  • 56 cloves garlic, minced
  • 12 teaspoons red pepper flakes (to taste)
  • 2 tablespoons low-sodium soy sauce (30ml)
  • 1 teaspoon brown sugar (4g)
  • 1 teaspoon sesame oil (5ml)
  • 23 green onions, sliced
  • Optional toppings: soft-boiled egg, toasted sesame seeds, furikake, fresh spinach

Instructions

  1. Bring a medium pot of water to a rolling boil. Cook ramen noodles for 2 minutes (1 minute less than package directions). Drain, reserving 1/4 cup pasta water. Do not rinse.
  2. In a large skillet or wok over medium heat, melt 3 tablespoons unsalted butter. Add minced garlic and red pepper flakes; stir constantly for 45 seconds to 1 minute until fragrant and just golden.
  3. In a small bowl, whisk together soy sauce, brown sugar, and 1 tablespoon water. Pour into skillet; let bubble for 30 seconds, stirring constantly.
  4. Add drained noodles to skillet. Toss with tongs or chopsticks for 1-2 minutes until coated and glossy. Add reserved pasta water if sauce is too thick.
  5. Drizzle sesame oil over noodles; toss once more. Turn off heat.
  6. Divide noodles between two bowls. Top with sliced green onions and optional toppings. Serve immediately.

Notes

Undercook noodles by 1 minute to prevent mushiness. Keep garlic moving to avoid burning. Reserve pasta water to adjust sauce consistency. Taste and adjust chili flakes or soy sauce to preference. Best served immediately.
