  • 1 cup (240 ml) white vinegar (can substitute apple cider vinegar)
  • 1 cup (240 ml) water
  • 1/3 cup (67 g) granulated sugar
  • 1 tablespoon (15 g) kosher or pickling salt
  • 23 garlic cloves, crushed
  • 1 teaspoon black peppercorns (about 68 peppercorns)
  • 1 teaspoon mustard seeds
  • Optional: pinch of red chili flakes

Instructions

  1. Wash the banana peppers thoroughly under cold water. Slice into 1/4 inch (0.6 cm) thick rings, removing seeds if desired.
  2. In a medium saucepan, combine vinegar, water, sugar, salt, crushed garlic, black peppercorns, and mustard seeds. Heat over medium heat, stirring occasionally until sugar and salt dissolve, about 5 minutes. Do not boil.
  3. Using tongs, pack the sliced peppers tightly into a clean glass jar, leaving about 1/2 inch (1.3 cm) headspace.
  4. Pour the hot brine over the peppers, ensuring they are fully submerged. Use a utensil to push down any floating slices. Leave some space at the top.
  5. Screw on the lid tightly and let the jar cool to room temperature, about 30 minutes.
  6. Place the jar in the refrigerator for at least 24 hours; for best flavor, wait 48 hours before tasting.
  7. Enjoy the pickled banana peppers chilled or at room temperature. Keep refrigerated and consume within 3-4 weeks.

Notes

Do not boil the brine; just warm enough to dissolve sugar and salt. Remove seeds for milder heat. Refrigerate at least 24 hours for best flavor, 48 hours preferred. Store in fridge up to 4 weeks. Adjust sugar to taste for less sweetness. Optional red chili flakes add heat.
