  • 4 cups (960ml) cold filtered water
  • About 3 cups (720ml) crushed ice
  • Lemon zest from 1 lemon
  • Fresh mint leaves (optional, a handful)

Instructions

  1. Juice and zest the lemons: Roll lemons on the counter to soften, then juice to get about 1 cup (240ml) fresh lemon juice. Zest one lemon before juicing, avoiding the bitter white pith.
  2. Make the simple syrup: Combine ¾ cup sugar and ¾ cup (180ml) water in a small saucepan. Heat gently, stirring until sugar dissolves. Let cool to room temperature.
  3. Mix lemonade base: In a large pitcher, combine lemon juice, cooled simple syrup, and 3¼ cups (780ml) cold water. Stir well and adjust sweetness or water to taste.
  4. Crush the ice: Use a blender, food processor, or ice crusher to crush about 3 cups (720ml) of ice until fine but textured.
  5. Shake it up: Transfer lemonade base to a cocktail shaker or sealable pitcher. Add a handful of crushed ice and shake vigorously for 20-30 seconds to chill and froth.
  6. Serve over ice: Pour shaken lemonade into tall glasses filled halfway with crushed ice. Top with more crushed ice, garnish with lemon zest and fresh mint if desired.
  7. Enjoy immediately for best texture and flavor.
