A bright and fresh summer mocktail combining crushed strawberries, fresh basil, lemon juice, and sparkling water for a sweet, tart, and herbal sparkling drink.

  • 1 cup fresh strawberries, hulled and sliced
  • 810 large fresh basil leaves
  • ½ cup freshly squeezed lemon juice (about 120 ml)
  • 3 cups chilled sparkling water (about 720 ml)
  • ¼ cup simple syrup or preferred sweetener (about 60 ml)
  • Ice cubes
  • Optional garnishes: lemon slices, whole strawberries, fresh basil sprigs

Instructions

  1. Wash, hull, and slice about 1 cup of fresh strawberries.
  2. In a large pitcher, add the sliced strawberries and 8-10 fresh basil leaves. Gently muddle using a muddler or the back of a wooden spoon to release juices and oils without pureeing.
  3. Pour in ½ cup of freshly squeezed lemon juice and stir gently to combine.
  4. Add ¼ cup of simple syrup or preferred sweetener and stir until fully dissolved. Adjust sweetness to taste.
  5. Slowly pour 3 cups of chilled sparkling water into the pitcher and stir gently to mix without losing fizz.
  6. Fill glasses with ice cubes and pour the mocktail through a fine mesh strainer if desired. Garnish with lemon slices, whole strawberries, and fresh basil sprigs.
  7. Serve immediately for best fizz and freshness.

Notes

Do not over-muddle basil to avoid bitterness. Chill sparkling water well before use to maintain fizz. Add ice cubes just before serving to prevent dilution. For a smoother drink, strain muddled mixture before adding sparkling water. Variations include swapping basil for mint or rosemary, using different berries, or reducing sweetener for a low-sugar option.
