Savory All-American Beef Burgers with Crispy Onions and Secret Sauce

  • 1 pound (450g) ground beef, ideally 80/20 blend for juiciness
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon Worcestershire sauce
  • 1 large yellow onion, thinly sliced into rings
  • ½ cup (60g) all-purpose flour
  • ½ teaspoon smoked paprika (optional)
  • Salt, to taste
  • Vegetable oil, for frying
  • ½ cup (120ml) mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • 1 teaspoon apple cider vinegar or lemon juice
  • Pinch of cayenne pepper (optional)
  • 4 soft burger buns, lightly toasted (brioche or potato buns recommended)
  • Leaf lettuce or baby spinach
  • Tomato slices
  • Optional cheese slices (cheddar, American, or pepper jack)

Instructions

  1. Slice the onion thinly into rings and separate them carefully. In a shallow dish, mix the flour, smoked paprika, and a pinch of salt. Dredge the onion rings in the flour mixture, shaking off excess.
  2. Pour about 1 inch of vegetable oil into a heavy skillet or pot. Heat over medium-high until it reaches 350°F (175°C). Test by dropping one onion ring in — it should bubble and float immediately.
  3. Working in batches, fry the coated onion rings until golden and crispy, about 2-3 minutes per batch. Use a slotted spoon to transfer them to a wire rack to drain and keep crisp.
  4. In a small bowl, whisk together mayonnaise, sweet pickle relish, Dijon mustard, smoked paprika, apple cider vinegar, and cayenne pepper. Taste and adjust seasoning. Chill in the fridge while you cook the patties.
  5. In a bowl, combine ground beef with salt, pepper, garlic powder, and Worcestershire sauce. Mix gently to avoid tough burgers. Divide into four equal portions (about 4 oz / 115g each) and shape into patties about ¾-inch thick, making a slight indentation in the center.
  6. Heat a cast iron skillet or heavy pan over medium-high heat. Add patties and cook about 4 minutes per side for medium doneness. If adding cheese, place slices on top during the last minute of cooking and cover with a lid to melt.
  7. While patties cook, toast the burger buns lightly in another pan or under a broiler until golden and slightly crisp.
  8. Assemble the burgers by spreading a generous layer of secret sauce on the bottom bun. Add lettuce or spinach, then the beef patty, tomato slices, and a heaping handful of crispy onions. Top with the other half of the bun and press gently.

Notes

Make a slight indentation in the center of each patty to prevent puffing during cooking. Fry onions in small batches to keep oil temperature steady and onions crispy. Rest patties for a couple of minutes off heat to lock in juices. For gluten-free, substitute flour with chickpea or rice flour. For dairy-free, use dairy-free mayo or Greek yogurt. Can grill patties instead of pan-frying for smoky flavor.
