  • 4 bone-in pork chops, about 1-inch thick, preferably center-cut
  • 1/4 cup (60 ml) bourbon
  • 2 medium fresh peaches, peeled and finely chopped (or thawed frozen peaches)
  • 2 tablespoons packed brown sugar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • A few sprigs fresh thyme (optional)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let them rest at room temperature for about 10 minutes.
  2. In a small bowl, mix the brown sugar and Dijon mustard until combined.
  3. Heat olive oil in a cast iron skillet or heavy-bottomed frying pan over medium-high heat until shimmering (about 2 minutes). Add the pork chops and sear for 4 minutes on the first side without moving them.
  4. Flip the pork chops carefully with tongs and cook the second side for another 3 minutes.
  5. Push the pork chops to the side and add the minced garlic directly to the skillet. Sauté for 30 seconds until fragrant, then add the chopped peaches and bourbon.
  6. Stir in the brown sugar and mustard mixture. Reduce heat to medium-low and let simmer gently for 5–7 minutes, stirring occasionally, until the glaze thickens and peaches soften but still hold some texture.
  7. Stir in the butter and fresh thyme sprigs. Swirl the pan gently to melt the butter and coat the pork chops evenly with the glaze.
  8. Check the internal temperature of the pork chops with a meat thermometer; it should read 145°F (63°C). If needed, lower the heat and cook for an extra minute or two.
  9. Transfer the chops to a plate and let rest for 5 minutes before serving.

Notes

Use a meat thermometer to avoid overcooking and ensure juicy pork. Let pork chops rest at room temperature before cooking for even cooking. Simmer glaze gently on medium-low heat to prevent burning. Butter adds richness but can be omitted or replaced with plant-based alternatives for dairy-free. Frozen peaches can substitute fresh peaches if thawed and drained. Optional smoked paprika or cayenne pepper can add smoky or spicy notes.
