Savory Grilled Peach and Prosciutto Flatbread with Goat Cheese

A quick and easy summer flatbread with sweet grilled peaches, salty prosciutto, and tangy goat cheese on a crispy grilled flatbread. Perfect for weeknight dinners or summer entertaining.

Ingredients

  • 2 large flatbreads or naan
  • 2 medium ripe but firm peaches
  • 46 slices prosciutto
  • 4 ounces goat cheese, crumbled
  • 12 tablespoons honey
  • A handful of fresh basil leaves, torn
  • 12 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Wash and dry the peaches. Cut them in half, remove the pit, and slice each half into 4-5 wedges. Brush both sides lightly with olive oil.
  3. Brush each piece of flatbread lightly with olive oil on both sides.
  4. Place the peach wedges directly on the grill grates. Cook for 2-3 minutes per side until grill marks appear and the peaches have softened slightly. Transfer to a plate and set aside.
  5. Place the flatbread on the grill, oiled side down. Cook for 1-2 minutes until grill marks appear and the bottom is crispy. Flip and cook for another minute.
  6. Transfer the grilled flatbread to a cutting board or serving platter. While still hot, crumble the goat cheese evenly over the surface.
  7. Tear the prosciutto slices into smaller pieces and arrange them over the goat cheese.
  8. Arrange the grilled peach wedges over the prosciutto and cheese, pressing them in gently.
  9. Drizzle lightly with honey and balsamic glaze.
  10. Scatter the torn basil leaves over the top. Sprinkle with a pinch of flaky sea salt and freshly cracked black pepper.
  11. Slice and serve immediately while warm.

Notes

For best results, have all toppings prepped before grilling. Use thick flatbread or naan to prevent sogginess. If you don’t have a grill, you can broil the flatbread and peaches in the oven.
