  • 1 lb sirloin steak, cut into 1-inch cubes
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme, optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil
  • 1 medium head cauliflower, cut into florets (about 4 cups)
  • 2 oz cream cheese, softened
  • 2 tbsp unsalted butter
  • 1/4 cup heavy cream (60 ml), more if needed
  • Salt and pepper, to taste
  • Optional: pinch of garlic powder or fresh chives for garnish

Instructions

  1. Bring about 2 inches of water to a boil in a medium saucepan. Add cauliflower florets, cover, and steam for 10-12 minutes until very tender.
  2. Drain cauliflower well and transfer to a food processor. Add softened cream cheese, butter, and heavy cream. Pulse until smooth and creamy. Season with salt, pepper, and optional garlic powder. Adjust cream to desired consistency. Set aside and keep warm.
  3. Pat steak cubes dry with paper towels. Season generously with salt and pepper.
  4. Place a cast iron skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking.
  5. Add steak cubes in a single layer (work in batches if needed). Sear for about 2-3 minutes per side until browned and cooked to preferred doneness (medium-rare to medium). Remove steak and set aside.
  6. Lower heat to medium. Add butter and minced garlic to the same skillet. Cook for about 1 minute until fragrant but not burnt. Stir in thyme leaves.
  7. Return steak bites to the skillet, stirring to coat thoroughly with the garlic butter sauce. Cook together for another minute to blend flavors.
  8. Plate the creamy cauliflower mash first, then spoon steak bites and sauce over the top. Garnish with chopped fresh chives or parsley if desired.

Notes

Pat steak cubes dry to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Add butter after searing to avoid burning. Watch garlic carefully as it burns quickly. For smoother mash without a food processor, use a hand masher and add extra cream and butter. Leftovers keep well for up to 3 days; reheat gently in a skillet with a splash of cream or broth.
