  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (about 1 medium) zucchini, finely grated and squeezed dry
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Grate the zucchini using the fine side of a box grater or food processor attachment. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
  4. In a large bowl, cream the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3 minutes.
  5. Beat in the eggs one at a time, then add the vanilla extract and mix until smooth.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined, avoiding overmixing.
  7. Fold in the squeezed zucchini until evenly distributed.
  8. Using a tablespoon or cookie scoop, drop rounded spoonfuls onto the prepared baking sheet about 2 inches apart. Shape slightly if desired.
  9. Combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon in a small bowl and sprinkle generously over each cookie.
  10. Bake for 12-14 minutes until edges are set and tops look slightly cracked but still soft to the touch.
