Spooky One-Pan Mummy Meatloaf for Easy Halloween Dinner

A fun and festive Halloween dinner featuring a juicy meatloaf wrapped in mashed potato ‘bandages’ with olive eyes, all cooked on one pan for easy cleanup.

  • 2 pounds ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/2 cup whole milk
  • 1/2 cup ketchup (plus extra for brushing)
  • 1 small yellow onion, finely diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1/2 teaspoon smoked paprika
  • 3 cups prepared mashed potatoes
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons butter, melted
  • Salt and pepper to taste (for potatoes)
  • 1216 pitted black olives, sliced into rounds
  • Small dollops of sour cream or cream cheese for eyeballs (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.
  2. In a large bowl, combine ground beef, breadcrumbs, beaten eggs, milk, 1/2 cup ketchup, diced onion, minced garlic, salt, pepper, parsley, and smoked paprika. Mix gently with your hands until just combined.
  3. Transfer meat mixture to prepared baking sheet and shape into a rough log about 8-9 inches long and 4-5 inches wide, with rounded ends.
  4. Brush a thin layer of ketchup over the entire meatloaf.
  5. Bake for 30 minutes.
  6. While meatloaf bakes, prepare mashed potatoes. Stir in melted butter, shredded cheddar (if using), and salt and pepper to taste. Potatoes should be thick but pipeable.
  7. Remove meatloaf from oven and let rest for 5 minutes.
  8. Spoon mashed potatoes into a piping bag or zip-top bag with a corner snipped off. Pipe horizontal strips across the meatloaf, leaving gaps for the eyes.
  9. Place two olive slices near the top for eyes. Add a tiny dollop of sour cream or cream cheese on each olive slice if desired.
  10. Return to oven and bake for another 15-20 minutes, until potatoes are slightly golden and meatloaf reaches an internal temperature of 160°F (71°C).
  11. Let rest for 10 minutes before slicing and serving.

Notes

Let meatloaf rest before adding potatoes to prevent sliding. Pipe thick strips (1/2 to 3/4 inch) to avoid drying out. Use a meat thermometer to ensure internal temperature reaches 160°F. Make extra mashed potatoes as they are popular.
