Easy homemade steak bites featuring tender sirloin cubes seared to perfection and tossed in a rich garlic butter sauce with melted Parmesan. Quick and simple, perfect for a satisfying meal any night.

  • 1 pound sirloin steak, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to season
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional)
  • Lemon wedges (optional garnish)
  • Cracked red pepper flakes (optional garnish)

Instructions

  1. Pat the sirloin cubes dry with paper towels to remove moisture. Season generously with salt and freshly ground black pepper on all sides. Let rest at room temperature for about 10 minutes.
  2. Heat a large heavy skillet or cast-iron pan over medium-high heat. Add 2 tablespoons olive oil and heat until shimmering, about 2 to 3 minutes.
  3. Add steak cubes in a single layer without overcrowding. Cook for about 2 minutes without moving to develop a crust. Flip and cook another 2 minutes for medium-rare. Remove steak bites and set aside on a warm plate.
  4. Lower heat to medium. Add 2 tablespoons butter to the pan. Once melted, add minced garlic and stir constantly for 30 to 45 seconds until fragrant but not browned.
  5. Sprinkle grated Parmesan into the garlic butter and stir to combine, allowing cheese to melt and thicken the sauce slightly.
  6. Return steak bites to the pan and toss gently in the garlic butter Parmesan sauce for about 1 minute to coat and warm through. Sprinkle chopped parsley if using.
  7. Transfer to a serving dish and garnish with lemon wedges and red pepper flakes if desired. Serve immediately.

Pat steak dry to ensure a good sear and avoid steaming. Do not overcrowd the pan; cook in batches if necessary. Stir garlic constantly and watch carefully to prevent burning. Use a cast-iron skillet for best heat retention and searing. For dairy-free, substitute vegan butter and omit Parmesan or use plant-based cheese.
