Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper and set aside.
  2. Whisk together dry ingredients: In a large bowl, combine all-purpose flour, baking soda, and salt.
  3. Cream butter and sugars: In another large bowl, beat softened unsalted butter with light brown sugar and granulated sugar until light and fluffy, about 3 to 4 minutes with an electric mixer on medium speed.
  4. Add eggs and vanilla: Beat in eggs one at a time, fully incorporating each before adding the next. Stir in pure vanilla extract.
  5. Slowly add dry ingredients: Gradually mix the flour mixture into the wet ingredients, about half a cup at a time, stirring gently but thoroughly after each addition. Stop mixing once flour disappears.
  6. Fold in chocolate chunks evenly using a spatula, avoiding smashing them.
  7. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 24 hours).
  8. Scoop cookies onto baking sheet about 2 inches apart, using about 3 tablespoons (45 g) of dough per cookie.
  9. Bake for 12-14 minutes at 350°F (175°C) until edges are golden but centers still look slightly underbaked.
  10. Cool on baking sheet for 5 minutes before transferring to a cooling rack.

Chilling the dough is essential to keep cookies thick and develop flavor. Use large chocolate chunks for gooey pockets. Avoid overmixing flour to keep cookies tender.
