A quick and easy Halloween punch with a stunning purple color and creamy, tropical flavor from ube extract, coconut milk, and pineapple juice. Perfect for parties and guaranteed to impress guests.

Ingredients

Scale
  • 2 teaspoons ube extract
  • 2 cups (480 ml) pineapple juice, unsweetened preferred
  • 1 can (13.5 oz / 400 ml) full-fat coconut milk
  • 2 cups (480 ml) lemon-lime soda (Sprite or 7UP)
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) sweetened condensed milk
  • 2 cups ice cubes
  • Optional garnishes: fresh mint leaves, edible flowers, gummy worms, purple-tinted sugar

Instructions

  1. Chill the coconut milk, pineapple juice, and lemon-lime soda in the refrigerator for at least 1 hour before making the punch.
  2. In a small bowl, combine the ube extract with 1/4 cup of the pineapple juice. Whisk until fully dissolved and uniform in color.
  3. In a large pitcher or punch bowl, combine the remaining pineapple juice, full can of coconut milk, and sweetened condensed milk. Stir gently but thoroughly.
  4. Pour the dissolved ube mixture into the pitcher. Stir slowly and continuously for about 30 seconds until the color is a uniform deep violet.
  5. Add the vanilla extract and stir once more to combine.
  6. Just before serving, gently pour in the lemon-lime soda. Stir slowly to incorporate without losing carbonation.
  7. Add ice cubes and give one final gentle stir. Serve immediately in glasses or cups.

Notes

Best served within 30 minutes of adding soda to maintain carbonation. For parties, mix everything except soda and ice ahead of time, then add those right before serving. Ube extract can be found at Asian grocery stores or online; Butterfly brand is recommended. If making dairy-free, use coconut condensed milk.
