Ingredients

Scale
  • 3 cups cooked, shredded chicken (rotisserie recommended)
  • 1/2 cup hot sauce (Frank’s RedHot Original recommended)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup ranch or blue cheese dressing
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 2 tablespoons hot sauce (for dip)
  • 1 cup celery sticks
  • 1 cup carrot sticks
  • 1 cup cucumber slices
  • 2 cups tortilla chips (thick, sturdy chips like Scoops)
  • 1 cup pretzel sticks or mini pretzels
  • 1 cup crackers (buttery or water crackers)
  • 1 cup bread cubes or crostini (toasted baguette slices)
  • 1/2 cup blue cheese crumbles
  • Fresh herbs (chives or parsley) for garnish

Instructions

  1. Make the Buffalo Chicken: In a medium bowl, combine 3 cups shredded cooked chicken, 1/2 cup hot sauce, 2 tablespoons melted butter, and 1/4 cup ranch or blue cheese dressing. Mix well until the chicken is fully coated and glossy. Set aside.
  2. Make the Creamy Buffalo Dip: In a separate small bowl, beat the softened 8 oz cream cheese with a spatula until smooth. Add 1/2 cup shredded cheese and 2 tablespoons hot sauce. Mix until well combined. (Can be served at room temperature or warmed in the microwave for 30 seconds.)
  3. Prep Your Dippers: Wash and cut celery into 3-inch sticks. Cut carrots into similar-sized sticks. Slice cucumber into rounds or half-moons. Cut baguette into thin slices and toast lightly if desired.
  4. Assemble the Board: Place a large board on the counter. Put the small bowl of creamy Buffalo dip in the center or slightly off-center. Place a second small bowl of extra ranch or blue cheese dressing nearby.
  5. Add the Chicken: Spoon the Buffalo chicken mixture onto the board in a large, slightly mounded pile next to the dip bowl.
  6. Arrange the Veggies: Group celery sticks in one section, carrot sticks in another, and cucumber slices in a small overlapping pile.
  7. Add the Crunchy Elements: Place tortilla chips in a large cluster. Arrange pretzel sticks in a separate pile. Fan out crackers and bread cubes around the board.
  8. Fill the Gaps: Sprinkle blue cheese crumbles in small piles around the board. Scatter fresh herbs over the chicken and dip for color.
  9. Final Check: Fill any empty space with extra chips, carrot sticks, or nuts. Serve immediately.

Notes

For best results, use rotisserie chicken for moisture and flavor. Soften cream cheese to room temperature for a smooth dip. Prep chicken and dip up to 2 days in advance. Keep chips and veggies separate until serving to maintain crunch. Adjust heat level by varying hot sauce amount.
