  • For the cinnamon streusel topping:
  • 1/4 cup all-purpose flour (30 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed (42 grams)
  • 2 tablespoons chopped nuts (walnuts or pecans, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth with a few small lumps remaining (about 1 cup mashed).
  3. Add melted butter, brown sugar, eggs, sour cream, and vanilla extract to the mashed bananas. Whisk together until combined and somewhat smooth, about 2-3 minutes.
  4. In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet mixture using a spatula. Mix just until no flour streaks remain.
  6. Prepare the cinnamon streusel topping by combining flour, brown sugar, and cinnamon in a small bowl. Add cold cubed butter and rub it into the dry ingredients with your fingers or a fork until coarse crumbs form. Stir in chopped nuts if using.
  7. Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle the streusel evenly over the batter, pressing lightly to help it stick.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly around 50 minutes, tent with foil.
  9. Cool the bread in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness and moisture. Avoid overmixing the batter to keep the bread tender. Keep butter cold for the streusel topping to ensure a crunchy texture. Tent with foil if streusel browns too quickly. Sour cream can be substituted with plain Greek yogurt or dairy-free yogurt. Optional add-ins include chocolate chips, toasted coconut flakes, or chopped crystallized ginger.
