  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1/2 cup mini chocolate chips
  • 2 tablespoons ground flaxseed (optional)

Instructions

  1. In a large mixing bowl, combine 1 cup peanut butter, 1/3 cup honey, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Stir until smooth and well combined.
  2. Add 2 cups rolled oats, 1/2 cup mini chocolate chips, and 2 tablespoons ground flaxseed (if using). Stir until oats are evenly coated and chocolate chips are distributed.
  3. Cover the bowl and refrigerate for 15-20 minutes to firm up the mixture.
  4. Line a baking sheet or large plate with parchment paper.
  5. Using a small cookie scoop or tablespoon, portion out the mixture and roll into smooth balls (about 20-24 balls). Lightly wet hands to prevent sticking.
  6. Place the rolled balls on the prepared baking sheet and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.

Notes

If mixture is too dry, add a tablespoon of honey or a splash of milk. If too wet, add another tablespoon of oats. For vegan option, use maple syrup instead of honey and dairy-free chocolate chips. For nut-free, substitute sunflower seed butter.
